Since its construction at the beginning of the 19th century, the cider press has been an integral part of Otatza's everyday activities. Like so many farmhouses along the Cantabrian coast, originally Otatza only produced cider for home consumption.

However, in 1995, in response to an ever growing public demand, cider-making gradually gained importance over other activities and is now the farm's principal product.

Among other varieties, pippin, txalaka and urtebete apples are used in the cider-making process, and are harvested from the orchards all year round with immense care and attention. The apples grown on Otatza's own property do not produce enough cider to satisfy demand, so the family uses apples from other farms in both Zerain and the surrounding area: Unsulategi, Telletxe, Otatza Goikoa, Txoristegi, etc.

Otatza cider is typical of Goierri. Delicate and intense with a slightly sweeter flavour and a pleasant light tone, it is a fine example of a deeply-rooted traditional art.
